HNI is one of the industry’s largest independent packers and one of only a few that produce a full line of almond products from inshell almonds to almond flours. We specialize in producing almonds for use as an ingredient in the confectionary, bakery, cereal, health and snack food industries in a full array of varieties, quality grades and granulations.
HNI owns and operates three state–of–the–art facilities, two in Hughson and one in Livingston, California. Our facilities are equipped with the latest technologies that allow us to efficiently fill every order to our customer's specifications and ensure product safety.

Whole Almond Processing
Natural shelled almonds delivered to our facilities are cleaned, sized, and sorted. Metal detectors and electronic sorting equipment are used to remove foreign material and damaged kernels. Sizing is a screening process that separates almonds into sizes by their diameter.
Hand sorting provides visual assurance that the product is clean and ready for packaging. We can achieve the low levels for foreign material required to meet the strict specifications of snack and confectionery grade products.
Shelled almonds are steamed and tumbled then dried in a process that removes the skin. Blanching provides an option to change the kernels look and texture and provides a milder flavor.
The blanched kernels are electronically color sorted to remove any adhering skins. A visual inspection by experienced and skilled hand sorting graders provides the final assurance of consistent quality.
Slicing, Dicing & Milling
Producing manufactured almonds to be used as an ingredient is our specialty. Our high capacity slicing and dicing lines can produce an unlimited variety of particle size options. Sliced almonds pass over screens to remove small pieces that are called almond flakes. Diced, slivered and split almonds are also screened. Undersized pieces are often ground to produce natural or blanched almond flour.
Metal detectors and electronic sorters are used on every line to remove foreign material and damaged kernels. Quality control is monitored by continuous online sampling and testing in our in–house laboratory.

Steam or Propylene Oxide Treatment (PPO)
Please contact us if you require Steam or PPO Treatment for any of your nut product line. We also offer custom pasteurization services. Both of our available options (steam and PPO) are validated to meet the USDA Standards for pasteurization.
HNI qualified staff provides high–tech security and complete documentation for all work performed. We are licensed by the State of California and follow only the strictest of guidelines in operating our facility.
HNI enforces a stringent quality assurance and food safety program throughout all stages of processing. Through the implementation of Good Agricultural Practices (GAP’s) in the orchards and Good Manufacturing Practices (GMP’s) during processing, we fulfill our commitment to producing safe, high quality products.
We meet the strict standards of the Global Food Safety Initiative (GFSI) auditing process following the BRC scheme. We participate in the Voluntary Aflatoxin Sampling Plan (VASP) and our HACCP quality control has been in place since 1997. Our in-‐house quality assurance laboratory enables us to perform microbial testing and chemical analysis using AOAC approved methods. Hughson Nut, Inc. products are Kosher approved and certified for Passover.
